<p>Black Grape Lassi (Calcium Rich Recipe)</p>
<p>A calcium brimming drink using black grapes. Appealing and colour and flavours it is sure to please all palates. </p>
<p>Preparation Time: 2 minutes.<br />
Cooking Time: Nil.<br />
Makes 4 glasses.</p>
<p>2 cups black grapes<br />
1 cup chilled low-fat milk<br />
1 cup chilled low-fat curds (dahi)<br />
4 tsp sugar</p>
<p>1. Combine the black grapes, milk, curds and sugar in a blender and blend till smooth.<br />
2. Pour equal quantities of the lassi into 4 individual glasses.<br />
    Serve chilled.</p>

<p>Kiwi Margharita<br />
An energetic combination of kiwi with lemon makes this citrus drink perfect for the summer. The bright green colour of kiwi crush, speckled with tiny black seeds adds a dramatic tropical flair to the Kiwi Margarita. The unique tangy-sweet flavour of this slushy drink goes well with a salt-rimmed margarita glass. The texture and flavour are best when served immediately, as the lemon juice tends to become acrid over time. </p>
<p>Preparation Time:  2 minutes.<br />
Cooking Time: Nil.<br />
Makes 2 glasses. </p>
<p>4 tbsp kiwi crush<br />
2 tbsp lemon juice<br />
2 tbsp sugar<br />
2 cups crushed ice </p>
<p>For the rim<br />
1 lemon halve<br />
Salt as required</p>
<p>For the rim<br />
1. Rub a lemon halve along the rim of a glass.<br />
2. Place the glass gently over a plate containing salt. Dust of the excess salt.<br />
3. Repeat steps 1 and 2 to make 1 more glass. Keep aside. </p>
<p>How to proceed<br />
1. Combine all the ingredients in a blender and blend till smooth.<br />
2. Place pour equal quantity of the drink into each of the salt rimmed glasses.<br />
    Serve immediately.</p>

<p>Quick Fruit Punch </p>
<p>A refreshing chiller that can be enjoyed anytime, the Quick Fruit Punch can be prepared in minutes using readymade fruit juices and vanilla ice-cream. This combination ensures a heavenly taste, which is very predictable too, because sometimes using fresh fruits gives a slightly bitter or sour taste if the fruits are not fully ripe or properly deseeded. Even if you have taken all the ingredients out of the fridge to make this fruit punch, you should still refrigerate the end-product for an hour or so before serving to get back the chillness lost during blending, because this drink is best enjoyed really, truly chill! </p>
<p>Preparation Time: 2 minutes.   Cooking Time: Nil.   Makes 3 big glasses. </p>
<p>1 cup readymade orange juice<br />
1 cup readymade pineapple juice<br />
1 cup readymade mango juice or Frooti<br />
1 cup vanilla ice-cream<br />
2 tbsp sugar </p>
<p>1. Combine all the ingredients in a juicer and blend till smooth and frothy.<br />
2. Pour equal quantities of the punch into 3 individual glasses.<br />
3. Refrigerate for at least 1 hour and serve chilled.</p>

<p>Need an excuse to start your day with some chocolate? add it to this cocoa milkshake! this cold confection makes a good substitute for coffee, especially when the weather is hot and you don’t fancy a hot beverage or a cooked breakfast.</p>
<p>Preparation Time: 5 minutes.<br />
Cooking Time: Nil.<br />
Makes 4 small glasses. </p>
<p>2½ tbsp cocoa powder<br />
2 cups chilled full-fat milk<br />
¼ cup sugar<br />
10 ice-cubes</p>
<p>For the garnish<br />
2 tbsp grated chocolate</p>
<p>1. Combine all the ingredients and blend in a juicer till the mixture is smooth and frothy.<br />
2. Pour equal quantities of the milkshake into 4 individual glasses.<br />
    Serve immediately garnished with chocolate.</p>

<p>Cardamom Lassi</p>
<p>This flavourful lassi is mid-way between plain sweet lassi and little on the spiced side. A medium-sweet and rich drink with hints of elaichi, this famous Punjabi drink is perfect to serve with lunch or even to have as a snack by itself because it is quite filling. Garnish the Cardamom Lassi with slivers of pistachio to complement the colour and flavour very aesthetically.</p>
<p>Preparation Time: 2 minutes.<br />
Cooking Time: Nil.<br />
Makes 2 big glasses. </p>
<p>2 cups thick curds (dahi)<br />
½ tsp cardamom (elaichi) powder<br />
5½ tbsp powdered sugar </p>
<p>For the garnish<br />
Pistachio slivers </p>
<p>1. Combine all the ingredients in a deep bowl and whisk well till smooth.<br />
2. Refrigerate for at least 1 hour.<br />
3. Pour into 4 individual glasses and serve chilled garnished with pistachio slivers.</p>

<p>Spinach and Mint Soup </p>
<p>Soup, with a lovely taste and consistency. This soup is brimful of the goodness of spinach and spring onion greens, not to forget a dash of coriander and mint. The nutmeg and black pepper not only spike up the flavour, they also bring in their healing properties—making this a true herbal delight.</p>
<p>Preparation Time: 10 minutes.<br />
Cooking Time: 7 minutes.<br />
Serves 3. </p>
<p>1½ cups shredded spinach (palak)<br />
12 mint leaves (phudina)<br />
2 tbsp finely chopped coriander (dhania)<br />
½ cup finely chopped spring onion greens<br />
2 tbsp butter<br />
2 tbsp plain flour (maida)<br />
2 pinches nutmeg (jaiphal) powder<br />
½ tsp freshly ground black pepper (kalimirch)<br />
¼ cup fresh cream<br />
Salt to taste</p>
<p>For the garnish<br />
1 tbsp fresh cream </p>
<p>1. Combine the spinach, mint leaves, coriander, spring onion greens and 4 cups of water in a deep non-stick pan, mix well and cook on a medium flame for 3 to 4 minutes. Drain well.<br />
2. Refresh using cold water, drain completely and blend in a mixer to a smooth thick purée. Keep aside.<br />
3. Heat the butter in a deep non-stick pan, add the plain flour and cook on a slow flame for 1 minute, while stirring continuously.<br />
4. Add the spinach purée, 2 cups of water, nutmeg powder, pepper powder, fresh cream and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.<br />
   Serve immediately garnished with fresh cream.</p>

<p>Rajma and Spinach Soup</p>
<p>Succulent and subtle, this delicately flavoured soup is made from an unusual combination, that of rajma and spinach. So health-wise you have a protein-enriched meal. The pairing of flavours is sure to be a hit with your friends and family. Enjoy it as a good beginning to your meal and add some grated cheese for appeal and to add richness to the soup.</p>
<p>Preparation Time: 15 minutes.<br />
Cooking Time: 19 minutes.<br />
Serves 6. </p>
<p>½ cup soaked and boiled rajma (kidney beans)<br />
1 cup shredded spinach (palak)<br />
½ tbsp oil<br />
2 tbsp finely chopped onions<br />
Salt and freshly ground black pepper (kalimirch) to taste<br />
1 tsp finely chopped garlic (lehsun)<br />
1½ tsp dried oregano<br />
1 tsp dry red chilli flakes<br />
2 tbsp tomato purée</p>
<p>For the garnish<br />
2 tbsp grated processed cheese</p>
<p>1. Heat the oil in a deep non-stick kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.<br />
2. Add the spinach, salt and pepper and sauté on a medium flame for another 1 to 2 minutes.<br />
3. Add the garlic, oregano and dry red chilli flakes and sauté on a medium flame for 1 more minute.<br />
4. Add the rajma and 4 cups of water, mix well and bring it to boil (approx. 4 minutes).<br />
5. Lower the flame and cook on a medium flame for 7 to 8 minutes, while stirring occasionally.<br />
6. Add the tomato purée, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.<br />
   Serve hot garnished with cheese.</p>

<p>Apple Cinnamon Soya Shake</p>
<p>A satiating fruity in-between snack, that can be made in a jiffy. The antioxidant flavonoids from soya, fibre from apples and the bio-active compound from cinnamon helps to avoid a quick rise in blood sugar levels and the low-fat milk gives you enough calcium while avoiding the unnecessary fat.</p>
<p>Preparation Time: 10 minutes.<br />
Cooking Time: Nil.<br />
Makes 6 glasses. </p>
<p>3 cups apple cubes (unpeeled)<br />
½ tsp cinnamon (dalchini) powder<br />
1 cup chilled soya milk (unflavoured)<br />
2 cups chilled low-fat milk, 99.7% fat-free<br />
½ tsp sugar substitute (optional)</p>
<p>1. Combine all the ingredients in a blender and blend till smooth and frothy.<br />
2. Pour equal quantities of the shake into 6 individual glasses.<br />
    Serve immediately.</p>

<p>Melon Smoothie</p>
<p>With the tanginess of orange and the creaminess of vanilla ice-cream, the not-so-popular muskmelon transforms into a delightful drink! Garnish the melon smoothie with a well-cut wedge of muskmelon to enhance its visual appeal.</p>
<p>Preparation Time: 10 minutes.<br />
Cooking Time: Nil.<br />
Makes 2 big glasses.</p>
<p>1½ cups chilled, deseeded and roughly chopped muskmelon (kharbooja)<br />
½ cup readymade chilled orange juice<br />
4 tbsp chilled fresh curds (dahi)<br />
½ cup vanilla ice-cream<br />
2 tbsp sugar</p>
<p>For serving<br />
2 muskmelon (kharbooja) wedges</p>
<p>1. Combine the orange juice, curds, vanilla ice-cream, muskmelon and sugar and blend in a juicer till the mixture is smooth and frothy.<br />
2. Pour equal quantities of the smoothie into 2 individual glasses.<br />
3. Serve immediately garnished with a muskmelon wedge on the rim of each glass.</p>

Cooking Time: Nil.<br />
Makes 2 small glasses.</p>
<p>¾ cup carrot cubes (unpeeled)<br />
¾ cup red capsicum cubes (deseeded)<br />
1 cup tomato cubes<br />
Salt to taste</p>
<p>For serving<br />
8 ice-cubes</p>
<p>1. Add the carrots, capsicum and tomatoes a few at a time in a hopper.<br />
2. Add the salt and mix well.<br />
3. Add 2 ice-cubes in each glass and pour equal quantities of drink over it.<br />
   Serve immediately.</p>
