Evil Bunny Chocolate Halloween Cakes
This is a fun an easy cake to make for Halloween, and the kids will LOVE helping and decorating. I found a cute bunny cutter in a Japanese shop and decided that would be perfect for making evil bunnies for Halloween (am I twisted?) You can use whatever spooky shapes you want!

Chocolate Tray Bake

Ingredients:

• 200g chocolate chips
• 200g/ 1-½ cups self raising flour
• 200g / 1 cup caster sugar
• 6 tbsp / ¾ cup cocoa powder
• 150 ml / ¾ cup sunflower oil
• 2 large eggs
• 280 ml / 1 cup sour cream
• 1 tsp vanilla extract

Chocolate ganache

• 200g Chocolate bitter sweet / dark chocolate chips
• 200ml (1cup) Double / heavy cream
• 1 tbsp butter

Decorations:
• Bunny cutter (or use a spooky shape cutter)
• 1 pack fondant icing
• little extra icing sugar for rolling
• black and red small icing tubes for decorating

8in x 8in Baking tin lined and greased. Preheat oven to 350f /180c

This is a very easy recipe – simply mix all the cake ingredients together apart from the chocolate chips, in a big bowl until smooth. Then mix in the chocolate chips. Pour into your lined baking tin and pop into the oven for 25- 30 minutes or until cooked through. To test if they are cooked poke a small skewer in the centre of the cake and if it comes out clean they are done. Or you can press it gently with your finger and if it bounces back it is cooked.

Leave to cool on a wire rack before making your ganache

Chocolate ganache, simply heat the cream and butter until hot – NOT boiling. Pour on top of your chocolate chips and stir until smooth. The heat melts the chocolate down.

Cut the cake into squares and coat with the ganache. Pop into the fridge to harden, while you make your evil bunnies (or whatever evil shapes you want)

Dust a clean work surface with icing sugar, and a rolling pin, and roll the fondant icing out until quite thin. Using your cutter cut out the shapes and decorate using the black / red icing tubes.

Stick the cut out faces / shapes on top of your cakes and serve up!
